    Oatmeal Chocolate Chip Cookies

February 26, 2021 by Chrissy Leave a Comment

Who doesn't love an oatmeal cookie? But forget the raisins... we're making these oatmeal CHOCOLATE CHIP cookies! They've got texture. They've got crispy edges. They've got chew. They've got CHOCOLATE. What more could you want?! Well, other than a big glass of cold milk to wash them down with... but other than that, what more could you want?!

A great thing about these cookies is that they're a one bowl/mixer cookie! They whip up so fast, so you'll have freshly baked cookies in no time!

Ingredients needed for oatmeal chocolate chip cookies

Nothing crazy or fancy is needed for these cookies. You'll just need the basic go-to cookie ingredients and of course, oats! Here's the list of ingredients:

    • Old-fashioned rolled oats

    • All-purpose flour

    • Salt

    • Baking soda

    • Cinnamon

    • Unsalted butter

    • Dark brown sugar

    • Eggs

    • Vanilla extract

    • Chocolate chips

Want to know another great thing about these cookies? You don't need to chill the dough! Once it's made, it's ready to be scooped and baked! You'll get your dough in the oven in just minutes.

Tips for making the best cookies

Use a large cookie scoop. The baking time for this cookie recipe is for using a large cookie scoop. If you use a smaller one, you may need to adjust the baking time a bit.

Use dark brown sugar. Dark brown sugar definitely helps make these cookies that much more delicious.  If you only have light brown sugar, that will still work. Dark brown sugar has such a rich, dark flavor, so you'll just lose a little bit of that with light brown sugar. But overall, it will work!

Use a silicone baking mat. I know it's not necessary to use a baking mat to get delicious cookies, but it's something that I highly recommend investing in. It helps create a more even baking surface for the cookies while they bake, and helps prevent them from burning as easily. It's probably one of the top 3 baking tools I use most often and I love it!

    Ingredients

    • 3 cups old-fashioned rolled oats

    • 2 cups all-purpose flour

    • 1 teaspoon baking soda

    • ½ teaspoon salt

    • ¼ teaspoon cinnamon

    • 1 ½ cup packed dark brown sugar

    • 1 ¼ cups unsalted butter, softened (2.5 sticks)

    • 2 eggs

    • 2 teaspoons vanilla extract

    • 2 cups chocolate chips

    Directions

    • Preheat your oven to 350°F.  Line 2 baking sheets with a silicone baking mat or parchment paper. Set aside.
    • In a mixer, cream together the softened butter and dark brown sugar for about a minute. Next, add in the eggs one at a time, along with the vanilla. Mix until everything is incorporated and is smooth.
    • Next, add your rolled oats, flour, baking soda, cinnamon, and salt to the mixer. Mix together for about 30 seconds until all of the ingredients are combined.
    • Lastly, add in your chocolate chips and turn the mixer back on for a few seconds, just long enough to mix them into the dough.
    • Using a large cookie scoop, scoop dough onto your prepared baking sheet, placing them a few inches apart. I can usually fit 6-7 cookies per baking sheet. Press more chocolate chips on the scooped dough, if desired.
    • Bake 13-15 minutes.
    • Remove from oven and let rest on the baking sheet for 3-4 minutes, then transfer to cooling rack. Repeat until all of your cookies are baked. Enjoy!
