Chocolate Chip Snack Cake with Milk Chocolate Frosting

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • ¼ cup vegetable oil
  • 2 eggs
  • ½ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • ¾ cup buttermilk
  • ¾ cup mini chocolate chips

Milk Chocolate Frosting

  • cup unsalted butter, softened
  • 4 oz milk chocolate bar, melted
  • 1 ½ cup powdered sugar
  • 2 tablespoons cocoa powder
  • 1 ½ teaspoons vanilla extract
  • 4 tablespoons heavy cream
  • Pinch of salt

Instructions
 

  • Preheat your oven to 350°F. Grease a 9x9 square pan and line it with parchment paper, if desired. Set the pan aside.
  • Add the flour, baking powder, baking soda, salt, and sugars to a large bowl. Give the dry ingredients a mix until everything is combined. Next, add in the vegetable oil, eggs, vanilla extract, and buttermilk. Whisk just until everything is combined and the cake batter is formed. Now, gently fold in the chocolate chips to the batter.
  • Pour the cake batter into the prepared pan. Spread the batter evenly. Bake for 34-36 minutes. The cake should spring back to the touch, and if you insert a toothpick into the center of the cake, it should come out clean. Let the cake cool in the pan for about 15 minutes, then transfer to a cooling rack to finish cooling completely.
  • To make the frosting, beat the softened butter for about a minute. Add in the melted milk chocolate and beat again until the chocolate is combined. Add the remaining ingredients; powdered sugar, cocoa powder, vanilla extract, heavy cream, and pinch of salt. Mix until combined, then beat on a medium speed for about a minute until the frosting is light and fluffy.
  • Spoon the frosting onto the top of the cooled cake. Using an offset spatula or the back of a spoon, spread the frosting out into an even layer. Cut into 16 pieces. Enjoy!
