Espresso Oreo Chocolate Chip Cookies

Ingredients
  

  • 1 ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons espresso powder
  • ½ cup unsalted butter, softened
  • cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 egg
  • 2 teaspoons vanilla extract
  • 6 Oreo cookies, chopped up
  • ½ cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F. Line two baking sheets with parchment paper. Set them aside.
  • Cream together the butter, granulated sugar, and light brown sugar. Once combined, add in the egg and vanilla extract, and mix again until everything is combined.
  • Add in the flour, baking soda, salt, and espresso powder. Mix until everything until everything is incorporated and the cookie dough is formed. Lastly, fold in the chocolate chips and chopped Oreo cookies.
  • Use a medium cookie scoop to scoop out the dough. Place the scooped dough onto the prepared baking sheets, a few inches apart.
  • Pop the dough into the prepared oven and bake them for 11-13 minutes. The cookies will still be a bit soft in the center. Let the cookies sit on the baking sheets for a few minutes, then carefully transfer them to a cooling rack to finish cooling.
