It really doesn't get much better than a chocolate chip cookie. But this time, we're throwing in a little something extra. These cookies are loaded with big espresso flavor, Oreo cookie chunks, and the perfect amount of chocolate chips!
INGREDIENTS FOR ESPRESSO OREO CHOCOLATE CHIP COOKIES
For this recipe, you'll need all of your usual chocolate chip cookie ingredients, plus a few extras. Here's what you'll need:
• All-purpose flour
• Baking soda
• Salt
• Espresso powder
• Unsalted butter
• Granulated + light brown sugar
• Egg
• Vanilla extract
• Oreo cookies
• Chocolate chips
MAKING ESPRESSO OREO CHOCOLATE CHIP COOKIES
These cookies come together in just a few easy steps! Here's what you'll do:
Step 1: Preheat your oven to 350°F. Line two baking sheets with parchment paper. Set them aside.
MAKE THE DOUGH
Step 2: Make the dough. Using a stand or hand mixer, cream together the cooled brown butter, granulated sugar, and light brown sugar. One combined, add in the egg and vanilla extract, and mix again until everything is combined.
Step 3: Add in the flour, baking soda, salt, and espresso powder. Mix until everything until everything is incorporated and the cookie dough is formed. Lastly, fold in the chocolate chips and chopped Oreos.
SCOOP THE DOUGH
Step 4: Use a medium cookie scoop to scoop out the dough. Roll the dough into balls and place each a few inches apart on the prepared baking sheets.
BAKE THE COOKIES
Step 5: Pop the dough into the prepared oven and bake them for 11-13 minutes. The cookies will be slightly underdone when they come out of the oven, but that's okay-- that's what you want. Let the cookies sit on the baking sheets for a few minutes, then carefully transfer them to a cooling rack.
TIPS FOR THE BEST COOKIES
Even though this is a pretty straightforward recipe, here are a few things you can do to take these cookies to the next level!
♦ Top with more goodies! Before baking or immediately out of the oven, I love adding a few extra of what ever goodies are inside to the top of the cookie. So for these cookies, I pressed some extra chocolate chips and Oreo chunks on top.
♦ Don't over bake the cookies. To make sure your cookies stay gooey and soft, make sure not to bake them much longer than called for in the recipe. If they look slightly under baked when they come out of the oven, that's exactly what you want! They will continue baking on the hot baking sheet for a few minutes once they're out of the oven.

Instructions
- Preheat your oven to 350°F. Line two baking sheets with parchment paper. Set them aside.
- Cream together the butter, granulated sugar, and light brown sugar. Once combined, add in the egg and vanilla extract, and mix again until everything is combined.
