Hazelnut Snowball Cookies

Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup hazelnut flour
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For Rolling

  • 1 cup powdered sugar

Instructions
 

  • Preheat your oven to 375°F. Line a baking sheet with parchment paper and set it aside.
  • Cream together the softened butter, ½ cup powdered sugar, and vanilla extract for 1-2 minutes until light and fluffy.
  • Add in the flour, hazelnut four, and salt. Mix until the dough forms. *The dough should be a bit soft but easy to work with.
  • Use a small cookie scoop to scoop the dough. Roll each scoop into balls and place them about an inch or so apart on the prepared baking sheet.
  • Bake for 10-12 minutes. The cookies should be just starting to brown on the bottom edges. Allow the cookies to cool almost completely, about 30 minutes.
  • Add the 1 cup of remaining powdered sugar to a bowl. Roll each cooled cookie in it. Enjoy!
