Cream together the softened butter, granulated sugar, and light brown sugar for about a minute, until light and fluffy. Add in the egg and vanilla extract and mix to combine.
Add in the flour, baking soda, and salt. Mix until the dough forms. Fold in the chocolate chips.
Using a medium cookie scoop, scoop the dough and place it onto a plate or small pan lined with parchment paper. Pop the scooped dough into the refrigerator to chill for 30 minutes.
After chilling the dough, preheat the oven to 350F. Roll the chilled, scooped dough into balls. Place the balls a few inches apart on a baking sheet lined with parchment paper.
Bake the cookies for 14-16 minutes, until the edges of the cookies are just starting to turn light golden brown. Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a cooling rack. Enjoy!
