Edible Double Chocolate Chunk Cookie Dough

August 13, 2020 by Chrissy Leave a Comment

Any other cookie dough lovers out there?? Sometimes, I swear I have a bigger craving for cookie dough than an actual cookie. Maybe it's because cookie dough is faster to make? I can be lazy sometimes, so that might just be it. I have made this cookie dough recipe so. many. times. this summer! It comes together in just a few minutes and is so rich and delicious!

Here are all the ingredients you'll need:

    • All-purpose flour
    • Cocoa powder
    • Espresso powder
    • Salt
    • Brown sugar
    • Softened unsalted butter
    • Vanilla extract
    • Milk
    • Dark chocolate chunks or chips (I like to use both)

OKAY- Let's make this cookie dough. ARE YOU READY?! Here we go!

First, you're going to want to do is toast your flour to make it safe to consume. Preheat your oven to 350°. Measure out and spread flour on a baking sheet lined with parchment paper. Bake for 5 minutes, remove, and allow to cool.

For this cookie dough, you can use a stand mixer or a hand mixer. Cream together the softened butter and brown sugar for about 2 minutes. Add in the vanilla and give it another quick whirl. Be sure to scrape down the sides of the bowl as you go!

Next, add in the flour, cocoa powder, espresso powder, and salt. Mix until all of the ingredients are combined, and there are no more powdery bits in the bowl. (The mixture will be crumbly at this point). Add in the milk one tablespoon at a time, until it has reached the consistency you like for your cookie dough.

Lastly, add in the dark chocolate chunks/chips (I like to use both) and give it another quick whirl just to mix them into the dough.

And THAT'S IT. How easy was that?!

    Ideas for enjoying:
    1. You can eat it as is. Just roll it into balls, flatten and cut into squares, or however else you want to eat it!
    2. Roll into balls and dip in melted chocolate to make cookie dough truffles. Because there's no such thing as too much chocolate, right?
    3. Break some cookie dough up and use it to top ice cream!

    Enjoy! ♥

    • ¼ cup Hershey's Dark cocoa powder

    • 1 tablespoon espresso powder (optional)

    • ½ teaspoon salt

    • ¾ cup packed brown sugar

    • ½ cup (1 stick) unsalted butter, softened

    • 1 ½ teaspoons vanilla extract

    • 4 tablespoons milk

    • 4 oz dark chocolate chunks

    • A handful of dark chocolate chips (optional)

    Directions

    • Preheat your oven to 350°F. Measure out your flour and spread it out evenly on a cookie sheet lined with parchment paper. Bake for 5 minutes, remove from oven and allow to cool.*
    • In a stand mixer, or with a hand mixer, cream together the butter and brown sugar. Add in the vanilla.
    • Add in the flour, cocoa powder, espresso powder, and salt.
    • Pour in the milk one tablespoon at a time, to make sure the cookie dough doesn't get too thin for your liking.
    • Dump in the chocolate chips and/or chunks, and give the dough another quick whirl to mix them in.
    • Roll into balls. Using a medium-sized cookie scoop will yield about 12 dough balls.
    • Enjoy now, or refrigerate for up to 4-5 days! You can also freeze the dough for up to 2 months.

    Notes

    • *To keep it a true no-bake recipe, you can also microwave your flour for 1 minute and 15 seconds, stirring about every 15 seconds.
