    The Best Double Chocolate Chip Cookies

    One day, I asked my husband to describe his idea of the perfect cookie. He can be pretty particular when it comes to baked goods, so I was curious to hear his answer. He thought about it for a minute, then gave me these three points. One: crispy edges, two: soft and chewy center, and three: they MUST have chocolate.



    With that criteria, I set out to come up with a cookie that fit all three points. After a lot of testing and trial and error, my husband's 'perfect cookie' was perfected. Crispy edges? ✓ Soft, chewy center? ✓ Chocolate?! ✓ They have just the right amount of crispiness and texture on the outside, with an inside that is satisfyingly chewy, and an overall rich, chocolaty flavor.



    What's in these cookies?

    Here are all of the ingredients you'll need to whip up a batch of these bad boys.

    • Flour

    • Cocoa powder

    • Baking soda

    • Salt

    • Espresso powder

    • Unsalted butter

    • Brown & granulated sugar

    • Eggs

    • Vanilla extract

    • Semi-sweet chocolate chips


    Ingredient recommendations

    Here are a few things I would recommendations to get the best cookie possible!

    Cocoa powder: Use Hershey's Special Dark Cocoa Powder!! I love a lot of different brands of cocoa powder, but this one definitely is a top contender. The regular Hershey's cocoa powder is good and full of flavor, the Special Dark cocoa powder is just so luscious. It has such a deep cocoa flavor and intensity that works perfectly in these cookies.

    Espresso Powder: While espresso powder can be optional, I highly recommend adding it. For this specific recipe, we're not adding enough espresso powder to actually have the cookies taste like coffee. The powder will just help enhance the chocolate flavor and make it even more rich. My two favorite brands of espresso powder to use are Dellalo or Medaglia D'Oro, but there are tons of other great brand you could use.


    A great thing about these cookies is that they require no chill time, so they're ready to go as soon as the dough is done! And the dough takes just minutes to whip up, so you'll be eating super delicious, chocolaty cookies in no time!

    I really hope you love these cookies as much as we do! You can enjoy these cookies as is, or warm them up slightly by popping them in the microwave for just a few seconds. Personal opinion, but I also highly recommend with a giant glass of cold milk! Happy baking!! ♥

    The Best Double Chocolate Chip Cookies

    Ingredients

    • 2 ⅓ cups all-purpose flour

    • ½ cup Hershey's Special Dark cocoa powder

    • 1 teaspoon baking soda

    • ½ teaspoon salt

    • 1 tablespoon espresso powder

    • 1 cup (2 sticks) unsalted butter, softened

    • 2 eggs

    • 1 cup packed brown sugar

    • ½ cup granulated sugar

    • 1 ½ teaspoons vanilla extract

    • 1 cup semisweet chocolate chips, plus more to top

    Directions

    • Preheat oven to 375°F. Line a cookie sheet with a baking mat or parchment paper. Set aside.
    • In a mixer, cream together softened butter, brown sugar, and granulated sugar. Allow the butter and sugars to cream together until the mixture is light and fluffy-- about 2-3 minutes.
    • Add in the eggs one at a time. Be sure to scrape down the sides of the bowl. Then, add in the vanilla extract.
    • Add the flour, cocoa powder, salt, baking soda, and espresso powder to the mixing bowl. Be sure to scrape the sides of the bowl down to make sure all of the ingredients get mixed in. Add in the chocolate chips and mix for a few seconds.
    • Using a medium cookie scoop, scoop out 6-8 cookies per tray, spacing them a few inches apart. Top dough balls with extra chocolate chips.
    • Bake for 13-14 minutes. Allow cookies to rest for a few minutes before transferring them to a cooling rack. Enjoy them warm or cooled!
