    Birthday Cake Cookie Dough Bars

    Confession... I'm typically not a huge fan of funfetti or birthday cake flavored things. They're always just a bland vanilla flavor or overly sweet dessert with some sprinkles thrown in. Even as a kid, I was always a chocolate kind of girl, never sprinkles. But everything changed with this cookie dough. The dough is perfectly sweet and the extracts and white chocolate give it lots of flavor. YUM!


    INGREDIENTS FOR BIRTHDAY CAKE COOKIE DOUGH BARS

    If you want to make these cookie dough bars, all you need is less than an hour of time and 9 ingredients! Here's what you'll need:

    • All-purpose flour

    • Unsalted butter

    • Granulated sugar

    • Vanilla + almond extract

    • Salt

    • Sprinkles

    • White chocolate

    • Coconut oil



    MAKING BIRTHDAY CAKE COOKIE DOUGH BARS

    To begin, start by creaming together the softened butter, granulated sugar, vanilla extract, and almond extract. Beat for about 2 minutes until light and fluffy. Add in the heat-treated flour and salt and mix until combined and a dough forms. Lastly, add in the sprinkles and mix to combine. Dump the finished cookie dough into an 8x8 square pan lined with parchment paper and press into an even layer. Set aside. 

    Melt the white chocolate and coconut oil together until smooth. Pour over the cookie dough and spread into an even layer. Top with more sprinkles. Pop into the refrigerator and allow it to chill until the chocolate is set. 

    When you're ready to cut the dough into bars, place the pan on the counter and let it sit at room temperature for about 10-15 minutes. This will make the bars easier to cut and help the chocolate later on top not crack. Using a very sharp knife, cut into 16 even pieces. Store them in an airtight container and keep them in the refrigerator. 



    HEAT-TREATING YOUR FLOUR

    When making no-bake goods like edible cookie dough, it's important to heat-treat your flour. If you've ever read top of the flour bag, a lot of them say you should never consume raw flour, at the risk it may contain bacteria. Cooking/heat-treating the flour will get rid of that! Here's what you need to do for that:

    Preheat your oven to 350F.
    2. Line a baking sheet with parchment paper. Dump your measured flour on the baking sheet and spread it out into an even layer.
    3. Pop into the preheated oven and bake for 5 minutes. After 5 minutes, remove from oven and allow to cool!

    THAT'S IT!


    TIPS FOR THE BEST BIRTHDAY CAKE COOKIE DOUGH BARS

    While this is a super simple no-bake recipe to whip up, I'm including just a few things you can do to make sure you get the best cookie dough bars possible!

    Add a splash of milk. While I typically don't need it for this recipe, if for any reason your cookie dough seems to be a bit too dry, you can always add a splash of milk to get it to the perfect consistency.

    Line your pan with parchment paper. This is my number one step for getting the cookie dough out of the pan. Leave the sides of the parchment paper long enough to be able to grab them and lift the dough out of the pan once chilled.

    Top with more sprinkles! Once you spread the white chocolate over the cookie dough, you can top that with more sprinkles... because why not?!

    Allow to sit on the counter before cutting into bars. Trying to cut the cookie dough straight into bars when they're straight out of the refrigerator can cause the chocolate to crack and make your bars uneven. I like leaving the finished dough sit on the counter for 10-15 minutes, then using a very sharp knife to cut them into squares.

    Ingredients

    • 2 cups all purpose flour*

    • ¼ teaspoon salt

    • ¾ cup unsalted butter, softened

    • ¾ cup granulated sugar

    • 1 teaspoon vanilla extract

    • ¾ teaspoon almond extract

    • 1 ¼ teaspoon coconut oil

    • 8 oz white chocolate

    • ¼ cup sprinkles, plus more to top

    Directions

    • Line an 8x8 square pan with parchment paper.
    • Cream together the softened butter and granulated sugar. Add in the vanilla and almond extract. Scrape down sides of the bowl.
    • Add in heat-treated flour and salt. Once everything is combined, mix in the sprinkles.
    • Dump your cookie dough into the prepared pan. With your hands or a spatula, press the dough down into an even layer. Pop it in the fridge to chill while you prepare the white chocolate topping.
    • In the microwave or using a double boiler, melt down the white chocolate and coconut oil until completely smooth. Pour the melted chocolate onto the chilled cookie dough. Spread the white chocolate in an even layer on top and top with more sprinkles if you'd like.
    • Chill for about 30 minutes, to allow the chocolate to set and harden. Once chilled, allow them to sit at room temperature for about 10 minutes, remove from pan, cut into squares, and enjoy!
