    Double Chocolate Muffins

    I don't know about you, but I'm a huge fan of chocolate for breakfast. I grew up eating cocoa puffs for breakfast, so I was destined to carry the chocolate for breakfast tradition into adulthood. So if you're ever craving some chocolaty goodness in the morning, these muffins are just what you need. They're not overwhelming sweet, but are so fluffy and are packed with chocolate.


    INGREDIENTS FOR DOUBLE CHOCOLATE MUFFINS

    The ingredients needed to make a batch of these amazing muffins are pretty simple. Just a lot of basic pantry items like flour, baking soda, and of course, chocolate chips. Here's everything you'll need!

    • All-purpose flour

    • Cocoa powder

    • Baking powder +baking soda

    • Salt

    • Unsalted butter

    • Milk

    • Brown sugar

    • Vanilla extract

    • Semi-sweet chocolate chips


    TIPS FOR THE BEST DOBULE CHOCOLATE MUFFINS

    Be gentle with your batter. Put down the whisk! Instead of mixing vigorously until everything is combined, try gently folding your wet and dry ingredients together with a spatula. Overmixing your muffin batter can result in a more tough muffin. Also, if you've ever made muffin that have come out with peaky muffin tops, overmixing the batter was likely the cause.

    Fill those muffin cups! Unlike cupcakes where you never want to overfill your baking cups, you want to be very generous with muffins. It is totally okay to have your muffin batter be up to the top of your baking cups, or even a little higher. This will help get you a big, fat, bakery-type muffin and muffin top.

    Bake your muffins on a high heat. This is one of the main tips for getting an amazing muffin top. Baking muffins on a high temperature makes them rise very quicker than if they were baked on a lower setting. For this recipe, I bake the muffins at 400°F.

    Ingredients

    • 2 ⅔ cups all-purpose flour

    • ½ cups cocoa powder

    • 2 teaspoons baking powder

    • 1 teaspoon baking soda

    • 1 teaspoon salt

    • 1 ¼ cup buttermilk

    • 1 ⅓ cup brown sugar

    • ½ cup unsalted butter, melted

    • 2 eggs

    • 2 teaspoons vanilla extract

    • 1 cup semi-sweet chocolate chips

    Directions

    • Preheat oven to 400°F. Using 2 muffin pans, line 16 cups with baking liners, spacing them out. Set them aside.
    • In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
    • In a separate bowl, whisk together the milk, melted butter, brown sugar, eggs, and vanilla extract.
    • Pour the wet ingredients into the flour mixture, and gently fold everything together with a spatula. When the batter is about halfway mixed, add in the chocolate chips and continue folding.
    • Once mixed (a few floury streaks in the batter are fine), scoop equal portions of the muffin batter into the lined trays. Top with more chocolate chips, if desired.
    • Bake for 19-22 minutes. The muffins should spring back to the touch. Remove from oven, and allow to cool for a few minutes in the pan, then transfer to cooling rack to continue cooling. Enjoy!

        Hi, Sonja!

        Yes- these muffins should be okay to freeze. You can place them in a freezer-safe ziploc bag, remove the air, and store in the freezer for a few months! 🙂
