Gingerbread is one of my favorite winter flavors! All of the warm spices and molasses flavors just give me all the cozy feels. I've partnered with Prairie Farms this holiday season to bring you this mouthwatering gingerbread coffee cake!
INGREDIENTS FOR GINGERBREAD COFFEE CAKE
In terms of ingredients, nothing too crazy is needed for this recipe. Here’s everything you’ll need to bake up this morning treat!
· All-purpose flour
· Baking soda
· Salt
· Spices
· Unsalted butter
· Granulated + dark brown sugar
· Prairie Farms Sour Cream
· Molasses
· Eggs
· Vanilla extract

WHAT IS COFFEE CAKE?
I love coffee cake so much! It's the perfect balance of fluffy cake and crunchy, sweet streusel topping. If you've never had coffee cake before, you definitely need to! But just to clarify something that you might not know-- coffee cake has no actual coffee in it. It is called coffee cake simply because it's typically enjoyed with a cup of coffee, so it's the perfect little slice of heaven for breakfast!
MAKING GINGERBREAD COFFEE CAKE
This coffee cake could not be more simple to whip up-- takes just minutes to make the batter and get in the oven!
MAKE THE CAKE
Step 1: Cream together the softened butter, granulated sugar, and dark brown sugar until light and fluffy; about 1-2 minutes. Add in the molasses, sour cream, eggs, and vanilla extract and mix to combine.
Step 2: To the bowl, add the flour, baking soda, salt, cinnamon, ginger, nutmeg, and clove. While starting to mix everything together, slowly pour in the buttermilk. Mix just until the batter is formed. *The cake batter will be a bit thick.
MAKE THE CRUMBLE TOPPING
What's a coffee cake without a crumb topping? Here's what you'll need to make it:
• Flour
• Brown sugar
• Melted butter
• Cinnamon
• Salt
Step 3: In a separate bowl, add all of the crumble topping ingredients and use a fork to mix together and combine.
ASSEMBLE THE COFFEE CAKE
Step 4: Spread the cake batter evenly in a 9x9 square pan that has been greased and lined with parchment paper. Use your hands to break apart and spread the crumb topping evenly on the top of the coffee cake.
Step 5: Pop the coffee cake into a preheated 350°F oven and bake for 45-55 minutes. *You can check to make sure the cake is done by inserting a toothpick and it comes out clean.
Once the coffee cake is done baking, allow it to cool completely before slicing.

TIPS FOR THE BEST GINGERBREAD COFFEE CAKE
♦ Don't skimp on the spices. Remember, this is gingerbread coffee cake! You want to be able to taste all of those warm, seasonal spices.
♦ Microwave leftover slices for 10-15 seconds. This might seem a little silly, since we let the coffee cake cool completely. But that was to make the cake easy to cut into slices. But microwaving individual slices is totally fine, and is a super easy tip to take your slice of coffee cake to the next level!
♦ Top it! While you can definitely enjoy the coffee cake as is, I topped this coffee cake with a simple glaze of ¾ cup powdered sugar, ½ tablespoon maple syrup, and about a tablespoon of milk. Instead of a glaze, you can also sift some powdered sugar over the top, too!

- 2 eggs
- 2 teaspoons vanilla extract
- ½ cup Prairie Farms Buttermilk
Crumb Topping
- ¾ cup all-purpose flour
- ½ cup light brown sugar
- ¼ cup unsalted butter, melted
- 2 teaspoons cinnamon
- Pinch of salt
Maple Glaze (optional)
- ¾ cup powdered sugar
- ½ tablespoon maple syrup
- 1 tablespoon milk
Instructions

- Optional: Drizzle with a glaze or sprinkle powdered sugar on top. Enjoy!
