    Super Creamy Hot Cocoa Fudgesicles

    One of my favorite childhood treats was ice cream. Whether it was hearing the ice cream truck coming down the road, or grabbing something from the freezer on a hot day. And one of the things I would always go for was fudgesicles. So today we're making some! Because the only thing better than buying a fudgesicle is making them yourself! They are so incredibly creamy and have so much delicious chocolate flavor.



    INGREDIENTS NEEDED FOR HOT COCOA FUDGESICLES

    Okay, so if you're now craving fudgesicles, let's make some! This recipe is so easy to make, and it only requires 5 ingredients! Here's everything you'll need!

    • Whole milk

    • Granulated sugar

    • Your favorite flavor of Land O Lakes® Cocoa Classics® Cocoa Mix

    • Cornstarch

    • Vanilla extract

    For this recipe, you will also need a medium sized pot and a popsicle mold.



    MAKING HOT COCOA FUDGESICLES

    These fudgesicles take less than 30 minutes to throw together. To start, add the granulated sugar, Land O Lakes® Cocoa Classics® Cocoa Mix, and cornstarch to a pot and whisk to combine. Add in about half of the milk to the pot and whisk until the mixture is pretty smooth. Whisk in the rest of the milk. Cook this cocoa mixture on medium heat, stirring constantly, until everything is smooth and it begins to slightly thicken (this should take about 9-12 minutes). Then, remove from the heat and stir in the vanilla extract. Allow the mixture to cool for about 10-15 minutes, stirring every few minutes.

    After cooling, it's time to pour it into the molds! Tip: This can be a bit difficult to pour in the popsicle molds directly from the pot. I like to pour the fudgesicle mixture into a large glass pouring measuring cup to make it easier. Pour even amounts almost to the top of each mold. For a standard popsicle mold size, this recipe will yield 8-10 fudgesicles.

    Once all of your popsicle molds are filled, place the top/cover on your molds and insert a popsicle stick into each one. Carefully transfer to the freezer. Allow them to freeze for at least 6 hours, but overnight is best!


    WHAT MAKES THESE FUDGESICLES SO GOOD?

    The real star of the show is the Land O Lakes® Cocoa Classics® hot cocoa mix they're made with! It's the chocolaty base that gives these frozen treats all their flavor. And the great thing about these fudgesicles is that you can totally customize them with whichever Cocoa Classics® flavor you want! For this recipe, I used their delicious Chocolate Supreme flavor. But, if you wanted S'mores, Mocha, or any other flavor, just use the same amount of packets called for in the recipe with your choice of cocoa flavor!     TIPS FOR THE BEST HOT COCOA FUDGESICLES

    • Allow the fudgesicles to freeze completely. Nothing is sadder than melted ice cream. Well, same goes for fudgesicles. You want to be sure that they freeze completely so they all pull out of the mold properly with their sticks. So be sure to check them after 6 hours, or allow them to freeze overnight.

    • Run the molds under warm water. Once your fudgesicles are ready to eat, sometimes getting them out of the molds can be a little tricky. Careful not to get water on the the actual fudgesicles, run the molds under warm (not hot) water for 15-20 seconds to help them release from the molds.

    Ingredients

    • 3 cups whole milk

    • ¼ cup granulated sugar

    • 3 packets Land O Lakes® Cocoa Classics® hot cocoa mix

    • 2 tablespoons cornstarch

    • 1 ½ teaspoon vanilla extract

    • ½ tablespoon cocoa powder (optional)

    Directions

    • Add the granulated sugar, Land O Lakes® Cocoa Classics® Cocoa Mix, and the cornstarch to a pot and whisk to combine. Add in about half of the milk to the pot and whisk until the mixture is pretty smooth. Whisk in the rest of the milk.
    • Cook the cocoa mixture on medium heat, stirring constantly, until everything is smooth and it begins to slightly thicken, careful not to let it come to a rolling boil (this should take about 9-12 minutes). Then, remove from the heat and stir in the vanilla extract. Allow the mixture to cool for about 10-15 minutes, stirring every few minutes.
    • After cooling, carefully pour the fudgesicle mixture evenly into popsicle molds. Put the top on and insert a popsicle stick into each. Pop in the freezer to freeze completely, at least 6 hours or overnight.
    • When you're ready to enjoy, take the fudgesicles out of the freezer and run the molds under warm (not hot) water for about 15-20 seconds. Gently wiggle and pull each fudgesicle out of the mold. If they are still stuck, run them under warm water for another 5-10 seconds at a time until loose enough to remove from the molds. Enjoy!
