    Almond Coffee Cake

    Who doesn't love coffee cake for breakfast?! This almond coffee cake has a tender and fluffy texture, a bright, nutty almond flavor and the perfect amount of crunch from the almond crumble on top.


    INGREDIENTS FOR ALMOND COFFEE CAKE

    Now let's make this tasty breakfast treat! First, you'll need to gather your ingredients! Here's what you'll need to make the cake:

    · All-purpose flour

    · Baking soda

    · Salt

    · Unsalted butter

    · Granulated + light brown sugar

    · Sour cream

    · Eggs

    · Vanilla + almond extract

    · Buttermilk


    MAKING ALMOND COFFEE CAKE

    This coffee cake could not be more simple to whip up-- it takes just minutes to make the batter and get in the oven!

    MAKE THE CAKE
    Step 1: Cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy; about 1-2 minutes. Add in the sour cream, eggs, vanilla extract, and almond extract and mix to combine.

    Step 2: To the bowl, add the flour, baking soda, and salt. While starting to mix everything together, slowly pour in the buttermilk. Mix just until the batter is formed. *The cake batter will be a bit thick.

    MAKE THE CRUMB TOPPING
    What's a coffee cake without a crumb topping? Here's what you'll need to make it:

    • All-purpose flour

    • Light brown sugar

    • Melted butter

    • Salt

    Step 3: In a separate bowl, add all of the crumble topping ingredients and use a fork to mix together and combine.


    ASSEMBLE THE COFFEE CAKE
    Step 4: Spread the cake batter evenly in a 9x9 square pan that has been greased and lined with parchment paper. Use your hands to break apart and spread the crumb topping and sliced almonds evenly on the top, alternating between the two.

    Step 5: Pop the coffee cake into a preheated 350°F oven and bake for 45-55 minutes. *Check the coffee cake after 45 minutes with a toothpick to see if the center of the cake is done. If not, continue baking.

    Once the coffee cake is done baking, allow it to cool completely before slicing.


    TIPS FOR THE BEST ALMOND COFFEE CAKE

    Even though this recipe is super simple to bake up, but here are a few tips to get you the best coffee cake every time!

    ♦ Don't overmix your coffee cake batter. Over mixing cake batter can result in a cake that's dense and a bit gummy in texture. Be sure to only mix your batter just until all of the ingredients are combined.

    ♦ Microwave leftover slices for 10-15 seconds. Even though I recommend letting the coffee cake cool completely first to make it easier to cut, microwaving individual slices is totally fine, and is a super easy tip to take your slice of coffee cake to the next level!

    ♦ Top it! While you can definitely enjoy the coffee cake as is, topping it with some sifted powdered sugar just gives it a little something extra!

    Ingredients
      

    Coffee Cake

    • 2 cups all-purpose flour
    • ¾ teaspoon baking soda
    • ¾ cup salt
    • ¾ cup unsalted butter, softened
    • ½ cup light brown sugar
    • ¼ cup granulated sugar
    • 2 eggs
    • ¼ cup sour cream
    • 1 teaspoon vanilla extract
    • 1 teaspoon almond extract
    • ½ cup buttermilk

    Almond Crumb Topping

    • ½ cup all-purpose flour
    • ⅓ cup light brown sugar
    • 3 tablespoons unsalted butter, melted
    • Pinch of salt

    Other

    • ½ cup sliced almonds

    Instructions
     

    • Preheat oven to 350°F. Grease a 9x9 square pan and line it with parchment paper. Set it aside.

    Making the Cake

    • Cream together the softened butter and sugars until light and fluffy. Add in the eggs, sour cream, vanilla extract, and almond extract. Mix until everything is well combined.
    • To the bowl, add in the flour, baking soda, and salt. While starting to mix everything together, slowly pour in the buttermilk. Mix just until the coffee cake batter forms.

    Making the Crumb Topping

    • For the crumble topping, combine all of the ingredients into a bowl. Mix together with a fork until everything is combined and you have nice chunks forming.

    Assembling and Baking the Coffee Cake

    • Pour the coffee cake batter into the prepared pan and spread into an even layer. Sprinkle the crumb mixture and sliced almonds on top of the batter, alternating.
    • Pop into the preheated oven and bake for 45-55 minutes. You can use a toothpick after 45 minutes to check the middle to see if it's done. Once done baking, allow it to cool completely before slicing.
