    Blueberry Skillet Cake

    This blueberry skillet cake is a super one-bowl recipe will soon become one of your favorite fruity desserts! A perfectly sweet vanilla and almond cake that is bursting with juicy blueberries in every bite!


    INGREDIENTS FOR BLUEBERRY SKILLET CAKE

    The first thing you'll need to do is gather your ingredients! Here's what you'll need:

    • All-purpose flour

    • Baking powder + baking soda

    • Salt

    • Granulated sugar

    • Unsalted butter

    • Sour cream

    • Egg

    • Vanilla + almond extract

    • Milk

    • Blueberries


    MAKING BLUEBERRY SKILLET CAKE

    This blueberry skillet cake is a super easy one-bowl recipe that comes together in just minutes!

    Step 1: Preheat your oven to 350°F. Grease a 10" cast iron skillet well with butter or oil. Set it aside. 

    Step 2: In a large bowl, combine the flour, baking soda, salt, and granulated sugar. Whisk together until combined. 

    Step 3: Add in the melted butter, sour cream, egg, vanilla extract, and milk. Whisk just until everything is combined and the batter forms. Fold in the blueberries. 

    Step 4:  Pour the batter into the prepared skillet and spread into an even layer. Top with more blueberries, if desired. 

    Step 5: Bake the skillet cake for 25-30 minutes, until the top is a light golden brown and the cake springs back to the touch. Allow it to cool for at least 15 minutes before digging in! 


    TIPS FOR THE BEST SKILLET CAKE

    ♦ Don't over mix the cake batter. To make sure your skillet cake stays light and fluffy, be sure not to over mix your batter. Whisk just until the batter forms and fold in the blueberries.

    ♦ Enjoy it warm! While you can definitely make this skillet cake in advance, I love baking it just before I'm ready to dive in. I let it cool for about 30 minutes, and it's still warm and cozy.

    ♦ Top it! Give this skillet cake a little something extra when serving this up and top it with some sifted powdered sugar and some scoops of vanilla ice cream!
