    Spiced Snack Cake with Eggnog Cream Cheese Frosting

    One of my favorite parts of the season is using allll of the warm holiday spices in baked goods! I love them all-- cinnamon, nutmeg... even clove! So today, we're taking all of those classic flavors and making a spiced snack cake! It's a super moist cake that has all of the warm holiday spices and is topped with a super creamy eggnog cream cheese frosting.


    INGREDIENTS NEEDED FOR SPICED SNACK CAKE

    This snack cake is crazy easy to make, and doesn't require any fancy ingredients. So let's get baking! Here is your shopping list:

    • All-purpose flour

    • Baking soda + baking powder

    • Salt

    • Spices

    • Prairie Farms unsalted butter

    • Prairie Farms buttermilk

    • Granulated + light brown sugar

    • Eggs

    • Vanilla extract


    HOW TO MAKE SPICED SNACK CAKE

    To begin, preheat your oven to 350°F. Grease a 13x9 pan and line it with parchment paper, if desired. Set the pan aside.

    With a hand or stand mixer, cream together the softened butter and sugars. Beat for 1-2 minutes until light and fluffy. Add in the eggs and vanilla extract and mix to combine. In a separate bowl, mix together the flour, baking soda, baking powder, salt, and spices. Add about half of the dry ingredients to the butter mixture, as well as half of the buttermilk. Mix until partially combined. Then, add in the rest of the dry ingredients and the rest of the buttermilk. Mix until everything is combined and your cake batter is smooth.

    Pour the batter into the prepared pan. Bake for 34-36 minutes. Once done baking, the cake should be a golden color and should spring back to the touch. Allow the cake to cool completely.


    INGREDIENTS FOR EGGNOG CREAM CHEESE FROSTING

    Now it's time to make what *might* be the best part of this recipe... the eggnog cream cheese frosting to top it with! It calls for just a handful of ingredients and takes only a few minutes to whip up! Here's what you'll need:

    • Prairie Farms unsalted butter

    • Prairie Farms cream cheese

    • Powdered sugar

    • Vanilla extract

    • Spices

    • Prairie Farms eggnog


    MAKING THE FROSTING

    To make the frosting, cream together the cream cheese and softened butter until light and fluffy. Once fluffy, add in about half of the powdered sugar, vanilla extract, and the eggnog. Mix until about halfway combined. Add in the rest of the powdered sugar and mix until combined. Then, continue to beat the frosting on a medium speed for about 2 minutes. This will get the frosting light and fluffy. Now it's ready to top your cake!

    *If you want your frosting to be a bit thicker, add a bit more powdered sugar. If you want it more like a thinner glaze, add a splash more of eggnog.

    Ingredients

    • 2 ¼ cups all-purpose flour

    • 2 teaspoon baking soda

    • 1 ½ teaspoons nutmeg

    • ¾ teaspoon ginger

    • ¼ teaspoon clove

    • ½ cup (1 stick) Prairie Farms unsalted butter, softened

    • ½ cup granulated sugar

    • ¾ cup light brown sugar, packed

    • 2 eggs, room temperature

    • 2 teaspoons vanilla extract

    • cup Prairie Farms buttermilk

    • Frosting Ingredients
    • 4 oz Prairie Farms cream cheese, softened

    • 3 tablespoons Prairie Farms unsalted butter, softened

    • 2 - 2 ½ cups powdered sugar

    • 2-3 tablespoons Prairie Farms eggnog

    • ½ teaspoon vanilla extract

    • ¼ teaspoon cinnamon

    • ⅛ teaspoon nutmeg

    • Pinch of salt

    Directions
