    Sweet Potato Banana Bread

    One of the things I think the Quarantine of 2020 will be remembered for is the HUGE trend of baking banana bread. It's crazy just how many people were baking up loaves of banana bread like it was going out of style, myself included! I know that even as the world starts to slowly open back up, I am totally on board for keeping the banana bread train cruising!


    This sweet potato banana bread is a great variation from the classic banana bread. The sweet potato adds a subtle, extra flavor and tons of moisture. This bread is refined sugar-free, and sweetened with maple syrup and coconut sugar. The combination of sweet potato, banana, maple, and warm spices is so delicious.

    What do I need for this bread?

    Here are all of the ingredients that you'll need:

    • Flour

    • Baking soda

    • Salt

    • Cinnamon

    • Nutmeg

    • Sweet Potato

    • Ripe banana

    • Melted butter

    • Coconut sugar

    • Maple syrup

    • Eggs

    • Vanilla extract


    You will also need a standard sized loaf pan and some parchment paper.


    Tips for making making this Bread


    How to make the sweet potato puree. There are a few options for how to prepare the sweet potato for this bread. The quick option is to "bake" the potato in the microwave. Poke a bunch of holes with a knife or fork in the washed potato. Use your microwave's "potato" button to cook it. If your microwave doesn't have a potato button, cook for about 7 minutes, flipping halfway through. You can also bake the sweet potato in a 350°F oven for about 45 minutes. Allow to cool before peeling and smashing.

    Can I substitute the maple syrup and coconut sugar for regular sugar? While I haven't tried the substitution myself, I would imagine that you could probably sub out the maple syrup and coconut sugar for around ⅔ cup of packed brown sugar.


    You can enjoy it plain, or top it with endless toppings! Greek yogurt, peanut or almond butter, honey, butter... I personally love slathering a slice in peanut butter and sprinkling it with cinnamon. YUM!

    Ingredients

    • 1 ¾ cup all-purpose flour

    • ¾ teaspoon baking soda

    • ½ teaspoon salt

    • 2 teaspoons cinnamon

    • ¾ teaspoon nutmeg

    • ½ cup mashed sweet potato

    • 1 ½ cups mashed ripe bananas

    • ⅓ cup maple syrup

    • ½ cup coconut sugar

    • 2 eggs

    • ¼ cup unsalted butter, melted

    • 2 teaspoons vanilla extract

    • ⅓ cup chopped walnuts (optional)

    Directions

    • Preheat oven to 350°F. Grease a loaf pan and line with parchment paper, if desired. Set aside.
    • In a large bowl, whisk together the mashed sweet potato, mashed banana. maple syrup, coconut sugar, eggs, melted butter, and vanilla extract.
    • To the wet mixture, add in the flour, baking soda, salt, cinnamon, and nutmeg. Whisk together until everything is combined. If you choose to add walnuts, fold them in now.
    • Pour batter into the prepared loaf pan. Give the pan a little shake to make sure the batter is even.
    • Pop in the oven and bake for 45-50 minutes.
    • Remove from oven and allow to cool for at least 30 minutes before slicing.
