    Cranberry Orange Slice and Bake Cookies

    Does the idea of having prepared cookie dough sitting in your fridge... ready to bake... sound incredibly appealing?? Well, you can have just that with these cookies! The dough for these cranberry orange slice and bake cookies is made in just minutes, and can be stored in the fridge or freezer for a few months, so you can have freshly baked cookies whenever you want!


    Ingredients for these cookies

    Similar to being super easy to make, the ingredients are pretty simple as well! You only need a handful of things-- here are all the ingredients you will need.

    • All-purpose flour

    • Unsalted butter

    • Powdered sugar

    • Salt

    • Vanilla extract

    • Orange zest

    • Orange juice

    • Dried cranberries


    What is a slice and bake cookie?

    A slice and bake cookie is just what it sounds like-- cookie dough that you slice and bake! Remember those tubes of Pillsbury sugar cookie dough you would have in your fridge as a kid? You'd just open the package, cut slices, and throw them in the oven? It's the same thing! This cranberry orange dough is make and kept in the fridge, so it's ready to slice and bake whenever you want fresh cookies!


    How long do I need to refrigerate the dough?

    For this dough, I recommend chilling the dough for at least 2 hours. This will help solidify the butter, and keep the cookies from spreading while baking. In my opinion, the longer you chill the dough, the better!

    Ingredients

    • 2 ⅓ cup all-purpose flour

    • 1 cup (2 sticks) unsalted butter, softened

    • 1 cup powdered sugar

    • ½ teaspoon salt

    • ½ teaspoon vanilla extract

    • Zest from one large orange (about 1.5-2 tablespoons)

    • 1 tablespoon orange juice

    • ½ cup dried cranberries, chopped

    Directions

    • Beat together the softened butter, powdered sugar, and orange zest for about a minute. Scrape down the bowl halfway through. Then, add in the vanilla extract and orange juice.
    • Add the flour and salt. Once the dough is almost completely combined, add in the chopped cranberries until everything is mixed and there are no more floury bits.
    • Dump the finished dough onto a large strip of plastic wrap. Form and roll dough into a log that's about 9-10 inches long and about # inches around. Wrap in the plastic wrap and refrigerate for at least 2 hours, or overnight.
    • Whenever you're ready to bake your cookies, before you pull your dough log out of the fridge, preheat your oven to 350°F. Once preheated, unwrap and slice the chilled dough into slices that are about ½ inch thick.
    • Place on a baking sheet lined with parchment paper or a baking mat, spaced about 3 inches apart.
    • Bake for 18-20 minutes. The cookies will still seem a little bit soft, but they will harden once they cool completely. Enjoy!
