Coffee cake is such a simple yet classic treat. The soft cake with a crunchy streusel top, and so much cinnamon flavor. This recipe takes all of the delicious classic coffee cake flavor and bakes it up into one giant cookie! And just like traditional coffee cake, this cookie can definitely be enjoyed with a big cup of coffee. It's seriously so good!

INGREDIENTS NEEDED FOR A GIANT COFFEE CAKE COOKIE
Let's get baking! No crazy or fancy things needed to whip up one of these giant coffee cake cookies. Here are all of the ingredients you'll need:
• All-purpose flour
• Baking powder
• Salt
• Cinnamon
• Unsalted butter
• Granulated + light brown sugar
• Egg yolk
• Vanilla extract
• Milk

INGREDIENTS FOR THE CINNAMON STREUSEL TOPPING
And what's coffee cake without that crunchy cinnamon streusel on top? Here's what you'll need to make it for this cookie.
• All-purpose flour
• Light brown sugar
• Unsalted butter
• Cinnamon
• Pinch of salt

MAKING THIS GIANT COOKIE
Step 1: Cream together the softened butter with the granulated and light brown sugar. Add in the egg yolk, vanilla extract, and milk and mix until smooth.
Step 2: Add in the flour, baking powder, salt, and cinnamon and mix until the cookie dough forms. The cookie dough will be a little bit sticky, but should be rollable. *If your dough is too sticky, chill it in the refrigerator for 5-10 minutes, or until you can work with it.
Step 3: Roll the dough into a giant ball and place on the center of a baking sheet lined with parchment paper.
Step 4: Combine all of the crumble ingredients; melted butter, flour, brown sugar, cinnamon, and pinch of salt. Using a fork, mix everything together until you're left with chunks.
Step 5: Carefully press the chunks of crumble topping to the top and sides of the cookie. *It's going to seem like a lot, but once the cookie spreads, it's the perfect amount of crumble topping.
Step 6: Pop the cookie into a preheated 350°F oven and bake for 18-20 minutes, just until the edges start to turn golden brown. Allow the cookie to cool for a few minutes on the pan before transferring to a cooling rack. Then, you can let it cool completely or enjoy it warm!

Ingredients
Coffee Cake Cookie
- 6 tablespoons all-purpose flour
- ¼ teaspoon baking powder
- Pinch of salt
- ⅛ teaspoon cinnamon
- 2 tablespoons unsalted butter, softened
- 2 tablespoons granulated sugar
- 1 tablespoon light brown sugar, packed
- 1 egg yolk
- ¼ teaspoon vanilla extract
- ½ teaspoon milk
Crumb Topping
- 1 ½ tablespoons all-purpose flour
- 1 tablespoon light brown sugar
- ½ tablespoon unsalted butter, melted
- ½ teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper. Set it aside.
- In a bowl, cream together the softened butter and sugars. Add in the egg yolk, vanilla extract, and milk, and mix to combine. Add the flour, baking powder, salt, and cinnamon. Mix until combined and the dough forms.
- Roll the cookie dough into one large bowl and place on the center of the prepared baking sheet.
- To make the crumble, add all of the crumb ingredients to a bowl. Use a fork to mix everything together until the mixture is combined and you have big chunks of topping.
- Carefully press the chunks of crumble topping to the top and sides of the cookie. Pop in the oven and bake for 18-20 minutes.
- Once baked, allow the cookie to cool for a few minutes, then transfer it to a cooling rack. Enjoy warm or cool it completely. Sprinkle with powdered sugar, if desired.
