It's a soft and thick cookie, loaded with just the right amount of cocoa and is packed with white and semisweet chocolate chips.
INGREDIENTS FOR GIANT SINGLE SERVE RED VELVET COOKIE
Let’s get baking! This giant chocolate chip cookie calls for all of the standard, classic ingredients as a normal batch of cookies would call for, just scaled back. Here is everything you’ll need!
• All-purpose flour
• Cocoa powder
• Baking powder
• Salt
• Unsalted butter
• Egg yolk
• Granulated + light brown sugar
• Vanilla extract
• Red food coloring
• Chocolate chips
MAKING THIS SINGLE-SERVE COOKIE
To start making this giant red velvet cookie, mix together the melted butter and sugars until combined. Add in the egg yolk, vanilla extract, and red food coloring and mix to combine. Next, add in the flour, cocoa powder, baking powder, and salt and mix until the dough starts to forms. Fold in the chocolate chips.
Now, form the dough into one big round ball and place it in the center of a baking sheet lined with parchment paper or a silicone baking mat (you can absolutely make this recipe into two larger cookies instead of one giant cookie, you might just have to adjust the baking time slightly). Pop it into a preheated 350°F oven, and bake for 17-19 minutes. Once the cookie is done baking, you can gently press more chocolate chips into the top of the cookie.
Allow the cookie to cool for about 5-10 minutes on the pan before transferring to a cooling rack. Then, you can let it cool completely or enjoy it warm!
TIPS FOR THE BEST RED VELVET COOKIE
♦ Use Valentine's chocolates! Regular chocolate chips are totally fine for this cookie. However, to make it even more Valentine's Day appropriate, you can add some heart shaped chocolate chips or candies to the top of the finished cookie.
♦ Don't overbake your cookie. Like most cookies, over baking can cause your cookie to be too hard, crunchy, and dry. You want to pull it out when the edges are just starting to turn golden. It will continue to cook on the hot baking sheet for a few minutes once you pull it out of the oven.
♦ Enjoy it warm! You can choose to eat this cookie warm or completely cooled, but my favorite way to enjoy it is warm and with a big glass of milk. I love them the cookie is still warm and the chocolate is still gooey and melty.
